
Sao Thome Made with cocoa beans of the Amelonado variety from the island of São Tomé. In 1822, the islands of São Tomé and Príncipe were the first islands in Africa to import cocoa from Brazil, which earned them the nickname of the “chocolate islands”. São Tomé still has some direct descendants of the original Forastero plants imported from South America, which produce very high quality beans. Sao Tomé Callebaut® chocolate has a very intense and complex taste, rich in roasted cocoa and enhanced by a profusion of fruity notes: apricot, red fruits, citrus fruits and even hints of tea. Sao Tome is a great tasting chocolate. When it comes to perfect pairings, our chefs recommend pairing it with fruits that have moderate to high sweetness and acidity. Slightly more bitter ingredients, such as nuts or light coffees and spices (Szechuan pepper for example) with a slightly metallic sensation on the tongue, also create beautiful harmonies. With a standard fluidity, Sao Tomé can be used in a wide range of applications: molding, coating, ganaches, flavoring of pastry creams and mousses, etc.
