It comes in the form of a pod containing 5 to 8 seeds. Selim pepper is both the pod and the seeds. Aroma of wood resin then light scent of musky and woody coconut. On the palate, a subtle blend of cloves, eucalyptus, cubeb pepper, nutmeg, it is not very spicy. Reduced to powder in a mortar or a coffee grinder, it must be added at the end of cooking. It is used as a black pepper on meats, poultry, shellfish, delicious on sauerkraut as well as chocolate desserts. It is used to prepare the famous Touba coffee in Senegal. Origin: Togo
