Biorgane olives come from our olive grove in Morocco, at the foot of the Atlas. The fruits are harvested manually when ripe. After sorting by hand and rinsing, the olives are placed in large vats of coarse salt to remove the bitterness. They are stirred regularly for several months. The marbled note comes just before packaging, done under vacuum with brine (in order to avoid the phenomenon of oxidation of the olive) in our premises in France.
