Organic Roveja hand-harvested and sun-dried 150g

ANDa small legume similar to a pea but smaller, ranging in color from green to brown-grey.   It resists low temperatures and in conditions of water scarcity and for this reason it was cultivated at high altitudes from the Colfiorito plateau up to the Gran Sasso. ANDwas rediscovered by chance in 1998 in Civita di Cascia.   It was the food par excellence of the shepherds and peasants who lived at high altitudes.     With roveja they prepared tasty soups together with lentils, grass peas, broad beans, beans and even spelt.   It has an excellent taste and notable nutritional properties.   Of interest to vegetarians due to its high content of vegetable proteins.   When dry it can contain up to 21% proteins, up to 300 calories per 100 grams and up to 50% carbohydrates.   It is rich in potassium, phosphorus, fiber and vitamin B1.
