From our Assiolo late harvest wine from Catarratto, a vinegar with a perfect balance between a strong acidity and a clear sweet and almond note. It is the result of slow static biooxidation in chestnut and oak barrels at room temperature. Excellent in enhancing a salad based on both fresh and dried fruit, in a Mediterranean vinaigrette and in combination with onion-based dishes. Unfiltered, unpasteurized.
