Abondance is a raw milk cheese with cooked pressed paste made in Haute-Savoie. It comes exclusively from the processing of raw cow's milk produced in the department. It is named after the valley where it was born and the breed of cattle that gives it its milk. Abundance can be used in cooking, like all cooked pasta. Cut into strips, it enhances mixed salads.
