Tomme is produced from raw uncooked pressed cow's milk. Its rind has a rustic appearance and is beige, brown and mustard yellow in color. It is rather thin and dry. Its paste, white-cream in color, is dense, supple and melting at the same time. On the nose, the paste has a sweet smell of fresh milk. It has a cow taste, delicately fruity with a sweet hazelnut flavor.
