A spun-curd cheese made from fresh sheep's milk from Gargano, aged for 12 months on wooden boards. Its rind is worked using a traditional method: rubbed with extra virgin olive oil and a little wine vinegar. The cheese is pampered and turned several times until its maturity is satisfactory. Its chew is firm and its taste delicate: an exceptional pecorino. Pecorino stagionato is available in whole pieces of approximately 0.3 kg vacuum-packed.
