Our gorgonzola is an uncooked, straw-white cheese with green streaks due to the marbling process, i.e. the formation of mold. It is creamy and sweet, with a particular and characteristic flavor. It is produced from pasteurized milk from stables in the DOP area of origin, with the addition of lactic ferments and selected molds which give it its characteristic veins.
