Made with respect for French know-how, by our caseificio Parco in San Giovanni Rotondo in the Gargano, with buffalo milk from their on-site breeding. This buffalo blue is a real specialty of the caseificio. Its thick, hollow rind has a beautiful amber gray color. Its blue-veined paste will be soft or crumbly depending on the maturing (3 to 5 months). What we like about this cheese is its taste.
