Made by our caseificio Il Parco in San Giovanni Rotondo in Gargano, with cow's milk from the Puglia region. Smoked scamorza is a firm and supple spun cheese, matured for two to five weeks and wood smoked. It has a beautiful smooth crust colored by smoking and a woody taste on the palate. It also exists in a natural version. It can be eaten grated or sliced to melt it in your pasta, pizzas, gratins, etc. but also raw, in slices or dice, to add to your salads or skewers for example.
