
Made with respect for French know-how, by our caseificio Il Parco in San Giovanni Rotondo in Gargano, with buffalo milk from their breeding on site. This buffalo blue cheese is a real specialty of the caseificio. Its thick, hollow rind has a beautiful amber gray color. Its blue-veined paste will be melting or crumbly depending on the maturation (3 to 5 months). What we like about this cheese is its taste. We find the finesse and buttery notes of buffalo milk, to which are added the spiciness of blue cheese.
