It is prepared by rubbing the pig's cheek with salt, sugar and Gargano spices (black pepper, thyme, fennel and garlic), then left to dry for a few weeks. Guanciale is gluten-free and is offered to you in vacuum-packed pieces of approximately 2 kg with a shelf life of 6 months.
