Selles-sur-Cher is named after the village in Loir-et-Cher where it was once sold. Depending on the length of the ripening period, which lasts from ten days to three weeks, the cheese is still fresh or drier. The Selles-sur-Cher has a soft, creamy texture on the edges. Selles-sur-Cher is a fitting addition to any cheese platter. In summer it can be cut into cubes and mixed with a tomato salad seasoned with olive oil and sprinkled with basil.
