The hams are seasoned and then dried for many months to reveal the simple and frank flavor of this exceptional meat. No added products and no preservatives Gault & Millau selection 2021-2022 The sliced 9-month-old Commenges raw ham is prepared with the best hams, carefully selected from exceptional pigs. Once chosen, the ham is salted, then dried in a dryer dedicated to it for 9 months continuously. During this period, the ham is assiduously checked to ensure that it is perfectly uniform. These 9 months are long but necessary to guarantee our customers an authentic taste during their tasting. Low in fat and very dry, our nine-month-old ham remains one of our favorite cold cuts.
