The company was founded in 1984 when a small local charcuterie company in Ariège was taken over. For many years, the Commenges family has been involved in the resale of quality charcuterie products. And it was in 2000 at the turn of the new century, on the strength of our long experience in the field of pork meat processing, that we decided to become manufacturers in our turn. The Commenges charcuterie was born.

Today is the 3rd generation of butchers to take over this local adventure to lead it to more distant horizons. Because here in Ariège, who does not know the Commenges charcuterie? Quality is transmitted by word of mouth! And tourism is changing our vision, promoting the notoriety of charcuterie. At Commenges, we are heirs to the traditional methods of charcuterie production. Respectful of taste as well as of the Ariège terroir, we artisan butchers have learned to perpetuate them while adapting them to the most stringent regulatory requirements in terms of health safety.
We are very much in favor of manual work. Cutting, chopping, seasoning, tying: our hands know by heart the products that we serve to you every day. It is all the know-how of your artisan charcuterie that is expressed through these expert and controlled gestures. Find out what makes the essence of our business. As the pig is our exclusive raw material, we pay particular attention to the quality of its meat. The same goes for the condiments and herbs used in the composition of our traditional recipes inspired by our region, Occitania. Our intransigence for quality and precision have shaped our passion for the profession of artisan butchers.

Our products are simple because they are prepared from raw ingredients that are full of flavor.
Our products are real because they come from pigs born and raised in Occitania, slaughtered just 500 meters from our laboratory. Among the products that have made us famous in Ariège and in the neighboring departments, you will find pâté de tête and pâté de fritons. In Ariège, pig rinds are eaten. Pre-cooked, they are then incorporated into our specialties such as rind sausage, rind pâté. As Ariège specialties with a traditional taste, you will find the natural pudding, cooked with minced meat in large pieces, our salted breast, dried with salt and pepper.
