SIPIAN - THE GREAT CEDARS 2020/2021

Les Grands Cèdres has the SIPIAN signature, and is identified as a fruit-driven wine combining liveliness, red fruits and black fruits as well as a real intensity of flavors. The second wine is not always intended to use juices that do not correspond to the Grand vin, less qualitative, too acidic... on the contrary, it is born from a careful selection of the best juices. Its plots are located on the edge of the estuary providing minerality and salinity, supporting the notes of black fruits. It is mainly made up of local Merlot and Cabernet Sauvignon grape varieties. And that’s without taking into account Frédéric Mehaye’s desire to make a high-quality wine in the Style of Château Sipian, striking a balance between deliciousness and tannic complexity. The SIPIAN method - THE GREAT CEDARS: This wine is vinified with the aim of preserving one and the same guideline “fruitiness”, the main asset of the Château SIPIAN. A majority of Merlot and Cabernet Sauvignon, all vinified in the ancestral way in Bordeaux, aim to preserve the identity of our endemic grape varieties through silky tannins and beautiful complexity aromatic. The SIPIAN Taste - LARGE CEDARS: An intense ruby color, a wine with a complex aroma between red fruit, redcurrant, blackberry and even raspberry. The palate is full and silky, the tannins are well integrated but remain present. The finish on the gingerbread brings out the aromatics of our barrels as well as our petit verdot which is expressed in the form of concentrated spices through white pepper, black pepper and liquorice
