Cabernet

The Cabernet grape produces an intense and characteristic wine with aromas of raspberries, blackcurrants and blackberries. It is a tannic, structured wine, made from Cabernet Sauvignon and Cabernet Franc. It is a wine for laying down par excellence which fully blossoms after two years of aging. An elegant dark garnet colour. An elegant nose, an alliance of ripe black and red fruits. Develops a greedy fruitiness on coated tannins. FOOD AND WINE PAIRINGS With duck skewer, grilled hanger steak, deer stew, wild boar terrine. OPERATING TEMPERATURE To be enjoyed at room temperature. Grape: Cabernet Geology: Clay-limestone Planting date: 1982 to 2013 Area: 6 hectares Vinification: Fermentation of the harvest after passage on a sorting table, followed by 2 fermentations before aging and bottling. Average production: 9,000 to 10,000 bottles per year Ageing: 1 to 6 years
