Gamay

This red Gamay grape is drunk young but can be kept for several years. It is distinguished by a fruity breadth. It is soft and balanced. Ruby color with violet reflections. An elegant nose with notes of raspberry and blackcurrant. Supple and light on round tannins give it a tender character. FOOD AND WINE PAIRINGS Beef tartare, gizzard salad, charcuterie platter. OPERATING TEMPERATURE To be enjoyed at room temperature or chilled in summer between 8 and 9°. Grape: Gamay Geology: Clay-limestone Planting date: 1982 to 2013 Area: 8 hectares Vinification: Fermentation of the harvest after passage on a sorting table, followed by 2 fermentations before aging and bottling. Average production: 10,000 to 15,000 bottles per year Ageing: 1 to 3 years
