Preparation made from tomatoes, eggplants, zucchini, peppers and onions, all fresh and of Provençal or Mediterranean origin. These selected vegetables are washed and trimmed before being cut into pieces. The tomatoes are first seeded, the peppers trimmed and seeded, the onion and herbs browned in olive oil. The whole thing is then stewed. After opening, store in the refrigerator and consume within 3 days.
