
Preparation made from tomatoes, aubergines, courgettes, peppers and onions, all fresh and of Provençal or Mediterranean origin. These selected vegetables are washed and trimmed before being cut into pieces. The tomatoes are seeded beforehand, the peppers trimmed and seeded, the onion and herbs, browned in olive oil. The whole thing is then stewed. Use: Reheat our ratatouille niçoise in a saucepan over low heat and accompany your red or white meats, incorporating their cooking juices, which you will have reserved. If you don't have meat as an accompaniment, our Niçoise ratatouille will make your delight simply reheated and drizzled with a drizzle of olive oil.
