Preparation made from tomatoes, aubergines, courgettes, peppers and onions, all fresh and of Provençal or Mediterranean origin. These selected vegetables are washed and trimmed before being cut into pieces. The tomatoes are seeded beforehand, the peppers trimmed and seeded, the onion and herbs, browned in olive oil.
