Pink TERROIR In the heart of the Golden Triangle of the Côtes de Provence, 30 hectares of vines in production extend over schist soils of Pierrefeu and clay-limestone soils on hillsides below the Cuers bar which dominate the three golden islands of Hyères. VARIETIES Syrah (40%), Grenache (40%), Vermentino (10%), Cinsault (10%). Limited return. Reasoned Agriculture. Average age of the vines: 18 years VINIFICATION Parcel and by grape variety. Cooling of the grapes then direct pressing, without maceration. Settling at low temperature, alcoholic fermentation in thermo-regulated stainless steel vats. The wines then rest until the start December, where blending takes place. TASTING NOTES With a delicate peach color, its airy and greedy nose expresses elegant aromas of grapefruit, lemon zest and a slight stony veil. In mouth, its generous heart offers luscious fruits such as tangerine to coat the palate. FOOD/WINE PAIRINGS This gourmet rosé wine goes perfectly with fish such as red mullet, sea bass or monkfish tartare with Provencal herbs. He goes just as well with a pork tenderloin, a butternut risotto with porcini mushrooms, or a dessert such as financier or a fruit crumble red. VARIETIES Syrah, Cabernet Sauvignon, Carignan. Manual harvest. Limited return. Reasoned Agriculture. Average age of the vines: 25 years VINIFICATION Parcel and by grape variety. The grapes are sorted and picked manually, then destemmed, lightly crushed and sent to temperature-controlled stainless steel vats. Pre-fermentation cold maceration for 5 days to extract maximum fruit. Pumping over and punching down during fermentation then devatting at the end. After the malolactic fermentation, the wines are matured 12 months in French oak barrels. Bottled at the estate. TASTING NOTES In its deep garnet color, its intense nose with a tasty veil delivers notes of crunchy fruit, blackcurrant, blackberry and candied cherry. mixed with spices, pepper, cinnamon and a hint of vanilla, the Red Heritage offers a nice structure in the mouth with elegant tannins and a long finish in the mouth. FOOD/WINE PAIRINGS This red wine will go well with all red meats and will sublimate your dishes. such as wild boar stew or roast duck breast. Serving temperature 16°-18°C Aging: 5-10 years
