
COASTS OF PROVENCE Vintage 2022 TERROIR In the heart of the Golden Triangle of the Côtes de Provence, 30 hectares of vines in production extend over schist soils of Pierrefeu and clay-limestone soils on hillsides below the Cuers bar which dominate the three golden islands of Hyères. GRAPE Vermentino (95%), Clairette (5%). Limited return. Reasoned Agriculture. Average age of the vines: 20 years VINIFICATION Parcel and by grape variety. Cooling of the grapes then pressing, with cold skin maceration to promote the extraction of compounds aromatic. Settling at low temperature. Alcoholic fermentation in thermo-regulated stainless steel tank. The wines rest until early December, when assemblies take place. Bottled at the estate. TASTING NOTES In its pale lemon yellow color, the nose delivers aromas of white flowers, of lemon with a hint of exotic fruits. The mouth is fresh and tangy with a saline finish that exhibits notes of jasmine and peach white. FOOD/WINE PAIRINGS This Héritage white wine goes perfectly with shellfish, shellfish, fish, seafood or with fresh cheese such as the goat. It is also ideal to drink simply as an aperitif.
