Golden Triangle Rosé 2021

Golden Triangle Appellation d'Origine Contrôlée COASTS OF PROVENCE TERROIR In the heart of the Golden Triangle of the Côtes de Provence, 30 hectares of vines in production for 2500 years. This cuvée comes from our lands of Terroir de l’Allamande, clay-limestone soil on hillsides facing the Islands of Hyères and Porquerolles. VARIETIES Grenache (65%), Syrah (25%), Rolle (10%). Manual harvest. Limited return. Reasoned Agriculture. VINIFICATION Parcel and by grape variety. Cooling of the grapes then pressing direct, without maceration. Settling at low temperature, processing of lees separately, alcoholic fermentation in temperature-controlled stainless steel vats. The wines then rest until the beginning of December when they are assembled. TASTING NOTES Rosé wine of great finesse. Under a light peach color, the nose reveals subtle and elegant aromas of grapefruit, lemon zest and exotic fruits such as pineapple. On the palate, the attack is lively, then notes of ripe citrus coat the palate. Persistent finish and salivating. FOOD/WINE PAIRINGS This gastronomic rosé wine with its very light colour, will be appreciated on dishes of great finesse, Mediterranean fish (fillets of red mullet, sea bream tartare), roasted veal chop, butternut risotto with porcini mushrooms, or for dessert with a financier.
