
75cl • AOP Faugères • Organic GRAPE VARIETIES • 60% Syrah, 30% Grenache Vieilles Vignes, 10% Mourvèdre TERROIR • The schist terroirs cling to the Piedmont of the Pic de la Coquillade which peaks at 650 meters above sea level. The high altitude terroirs are those whose nighttime freshness allows for gentle maturation and the most elegant expression of aromas. VINIFICATION • Harvests by plot on the oldest Grenache and Syrah vines. Traditional winemaking. Vatting can last up to 35 days, favoring gentle extractions. Épartial lifting in barrels (50% in new barrels). TASTING • Deep garnet color. Powerful, intense nose, dominated by stewed black fruits. Beautiful roundness with a combination of tannins and minerality (flint, graphite). Very aromatic, fruity. Meeting point between the AOP Faugères and AOP Saint-Chinian, the Château de Ciffre estate is located at a unique geological point, on a transition zone between a grey-black hillside of Faugères schists and another white hillside of limestone and rolled pebbles of Saint-Chinian, at the foot of the Pic de la Coquillade, which peaks at 700 m. The variety of terroirs and grape varieties, as well as the steepness and exposure of the plots, allow Château de Ciffre to express the originality of these two rare terroirs. A former Roman villa, the estate housed a windmill on the edge of the torrent and another windmill on a high point. The wines faithfully reflect the duality of this exceptional terroir. The Faugères are mineral, spicy and fresh, in a broad and racy style.
