75cl • AOP Saint Chinian • Organic GRAPE VARIETY • 45% Syrah, 55% Grenache TERROIR • Selected from the most beautiful plots, the terroirs are gneiss and high-altitude limestone which peak at 350m. It is a high altitude terroir whose nighttime freshness allows for gentle maturation of the tannins, the most elegant expression of aromas and finesse. VINIFICATION • Variable vatting from 25 to 30 days favoring the greatest gentleness in the extractions. Malolactic fermentation in French oak barrels. TASTING • Beautiful garnet red color. Aromatic complexity. On the nose, notes of cooked fruits, wood essences. A little sappy appearance. Spicy aromas. Straight mouth, good length. Under wooden case of x6 bottles Meeting point between the AOP Faugères and AOP Saint-Chinian, the Château de Ciffre estate is located at a unique geological point, on a transition zone between a grey-black hillside of Faugères schists and another white one of limestone and rolled pebbles of Saint-Chinian, at the foot of the Pic de la Coquillade, which peaks at 700 m. The variety of terroirs and grape varieties, as well as the steepness and exposure of the plots, allow Château de Ciffre to express the originality of these two rare terroirs. A former Roman villa, the estate housed a windmill on the edge of the torrent and another windmill on a high point. The wines faithfully reflect the duality of this exceptional terroir. Saint Chinian are delicious and fresh.
