VINIFICATION • Manual harvest. Traditional method. Punching down and pumping over for gentle and controlled diffusion of tannins. Operation preserving the delicacy of the fruits and the smooth richness in the mouth. Aged in French oak barrels for 10-12 months. TASTING • Ruby color, purplish reflections. Nose dominated by warm spices, notes of rose and violet. Rich and creamy mouthfeel. Fine tannins, well-blended wood, very elegant wine with notes of garrigue (rosemary, rockrose), white pepper, truffle. Fresh and mineral wine. A vast amphitheater facing due south and backed by the Montagne Noire, the Domaine de la Borie Blanche has 16 hectares of vineyards under the influence of the Mediterranean, with Grenache, Syrah, Mourvèdre and Carignan grape varieties. A rare terroir of schist and limestone spread over exceptional plots on hillsides, among the highest in the appellation. Acquired in 1999, the Domaine de la Borie Blanche takes its name from the dry white stone huts called “bories”; it is also a nod to Blanche, the only daughter of Nicolas and Miren de Lorgeril, born in 1995. Nestled against the foothills of the Montagne Noire, in the heart of Minervois, the estate stands out for its uniquely mineral environment, crisscrossed with dry stone walls. On this high-altitude terroir culminating at 400 metres, composed of limestone and schist, the marked Mediterranean influence is tempered by the night-time coolness descending from the ridges of the causse, which allows for a slower ripening of the grapes. This unique combination gives its wines a perfect balance between a delicious mouth with bright fruitiness, silky tannins and a fresh, mineral finish, underlined by notes of garrigue.
