OLD RED VINES 2020

Wine in Organic Farming Appellation: AOP Luberon Variety: 70% Syrah, 20% Grenache Noir & 10% Mourvèdre Soil: Clay-sandy soil. Plot located at approximately 200 m altitude.   Vine aged around forty years for Syrah, and around fifty years for Mourvèdre and Grenache.    Vinification: Manual harvest, 1/3 in whole bunches with selection of the stems and destemming of the remaining 2/3 in order to preserve the fruit and obtain a structured wine for keeping.   Maceration for 6 weeks in concrete vats during alcoholic fermentations with native yeasts, then malolactic fermentation in stainless steel vats for 2 weeks.   At the end of fermentation, racking for cleanliness and barreling by gravity into 500 L demi-muids and 300 L barrels of 2 to 5 wines maximum for 18 months.   Tasting: Intense, Woody & Blackcurrant TAV: 15% vol.alc.
