Wine in Organic Farming Appellation: AOP Luberon Grapes: 60% Viognier, 30% Roussanne and 10% Rolle Terroir: Clayey-sandy soil, deep enough to allow permanent, controlled grass cover on almost all rows. Ten-year-old vines, trellised in double cordon de Royat for Roussanne and Rolle, and pruned in Guyot for Viognier, located on the northern slope of the Petit Luberon. Windy zone which allows to reach interesting concentrations and maturities. Vinification: Night harvest, and maceration for 5 hours in the press. Static settling for 48 hours then fermentation at 13°C in temperature-controlled stainless steel vats to preserve the freshness of the aromas. At the end of the alcoholic fermentation, racking of 50% of the volume in order to preserve the fine lees and eliminate the coarser ones, fermentation in new barrels of 300 liters and 500 liters for 4 months on the remaining 50%, which brings roundness and aromatic complexity. Tasting: Floral, Buttery & Mineral VAT: 13% vol.alc.
