75cl • IGP Pays d’Oc GRAPE VARIETIES • 70% chardonnay, 20% sauvignon, 10% viognier TERROIR • Exceptional variety of the climate. Vines exposed to the North to benefit from the coolness during hot summers. The Altitude terroirs are those whose nighttime freshness allows for gentle maturation and the most elegant expression of aromas. VINIFICATION • Harvest at the coolest part of the night. Low pressure pressing of grapes. Cold static settling away from air. Controlled fermentation at 18° taking place over approximately 3 weeks. Conservation and aging on fine lees. TASTING • Bright and clear, with golden yellow highlights. Aromas of fresh white-fleshed fruits (vine peach, greengage), apricot. Floral touch. The mouth is round and unctuous with long, fresh finishes.
