This patchwork of climates and terroirs is the secret behind Ô: the grapes ripen slowly in perfect weather conditions and produce a fresh and elegantly balanced wine. VINIFICATION • Harvested at dawn, when temperatures are coolest, then the grapes are gently pressed to preserve the natural color of the juice. Static settling at 8-10°C for 24/28 hours. Controlled fermentation at 16-18°C. TASTING NOTES • Peach hue. Intense nose of red fruits. Full and crisp mouthfeel. Balanced and persistent finish. Gastronomic rosé. This gastronomic rosé was born in the heart of vineyards backed by the Massif Central with a breathtaking view of the Pyrenees and the Mediterranean.The plots are selected at altitude on clay-limestone soils where the climatic conditions are ideal and give this vintage freshness and elegance.
