The Lady of Eleven Hours, Saint Emilion Grand Cru 2020

⏱ THE LADY OF ONZE HOURS 2019 - SAINT EMILION GRAND CRU 💚🌿 BIODYNAMICS 🌼 Béatrice and Vincent wanted to pay tribute in this cuvée to the flower that grows in their vines and has the particularity of opening at eleven o'clock. The niche of the owners is to produce dynamic wines, carried by a controlled acidity, not very rich in alcohol. In summary, few interventions, no addition in vinification, nor in aging of products, and a gentle aging which makes the wine a little apart in Saint-Emilion. During the harvest, a strict sorting which allows to keep only the best berries. The aging is carried out in 1200 liter tuns which respect the aromas of the wine, and terracotta jars produced near Florence. 🍷 On the nose, we find notes of red fruits, mocha notes. With great finesse and balance, with aromas of fresh black fruits and polished tannins, this atypical red wine for its appellation reflects the personality of its creators. This breeding of tuns and jars gives maximum purity to the fruit. It will be accompanied by fairly "tender" but tasty dishes, such as roast veal with porcini mushrooms. 🙌🏽 Trained for a few years by Béatrice's father, Vincent Rapin and his wife first bought a domain in 2000 in Vérac: Le DomaineE Valmengaux. Then in 2007, with the desire to pursue their passion and dedicate themselves fully to it, they created La Dame de onze heures in Saint-Emilion. This magnificent cuvée of Saint-Emilion Grand Cru, baptized "La Dame de Onze Heures" comes from the name of a small liliaceae, from the lily of the valley family, whose flower has the particularity of opening at eleven o'clock. This small plot is maintained like a garden, cultivated biodynamically, without weed killers or chemicals, moreover this lady would not appreciate it! The use of companion plants, the return to the fauna-flora balance, the discontinuation of fertilizers and weedkillers, the restitution of marcs bring back to these vines a forgotten harmony. 🍃 La Dame de Onze heures has been biodynamically driven since 2007, not out of fashion effect but out of true conviction. Very concerned with the life of the soil and micro-organisms, the natural balances, the companionship of plants, this property has been the field of organic experimentation since the very beginning. The Rapin family use plants a lot to improve the soil, loosen it and make it more fertile. Their philosophy is to be a maximum of work in the vineyards, a minimum in the cellar.
