Gamay de la Daronne - 2021 - Natural Wine - Organic Wine

This pale garnet red wine is a unique cuvée, entirely vinified in our cellar in Courbevoie, using Gamay Noir grapes, from partner winegrowers south-east of Angers who work their vines biodynamically. It is a complex and woody red, the aromas evoke the oven at my parents', at snack time, we observe a plum and black cherry pie, waiting to be sprinkled with cinnamon and nutmeg. We sipped it with Époisses refined with Marc de Bourgogne, on a saxophone solo from the early 80s. We are going to get these Gamay Noir from the brilliant winegrowers Xavier and Géraldine Cailleau. They come from plots around the château on a soil of sandstone with sponges on clay-limestone. 4.15 hours of road then arrived in Courbevoie we continue with the vinification. The grapes arrive at 8°C in the cellar. They are immediately scraped and crushed then pumped into a stainless steel tank. A cold maceration of 48 hours then the fermentation starts, we do daily pumping over for five weeks then we press the grapes and 12 months of aging in old Burgundy oak barrels. We only use a very small dose of sulfur which remains within the levels of natural wines (14 mg/L in total SO2) Happiness in a bottle 🙂
