Chenin de Maman - 2022

This cloudy white natural wine is a special vintage, entirely vinified in our cellar in Courbevoie, from Chenin Blanc grapes, from partner winegrowers southwest of Angers who work their vines organically. It is a taut and honeyed white, the aromas evoke a caramelized apple that crunches under the tooth, with its acacia flower syrup. We sipped it with a smooth Délice de Bourgogne, to a violin concerto from the early 19th century. We pick up these grapes from winegrowers Elisabeth and Greg Nouteau, who work their vines organically for 50 years. They come from a plot in Anjou. We collect the grapes by hand then we put the boxes in the refrigerated trucks. 3 15 hour drive then arriving in Courbevoie we continue with the winemaking. The grapes arrive at 8°C in the cellar. They are immediately pressed, vinified in stainless steel tank to maintain tension. We decided to do malolactic fermentation to add roundness. We do not use any doses of sulfur.
