The Sauvignon du Frérot - 2023

This natural white wine is a special vintage, entirely vinified in our cellar in Courbevoie, from Sauvignon Blanc grapes from a limestone plot in Île-de-France, from a partner winemaker located in Nonville, near Nemours. It is a crisp white on the flinty side, the aromas are reminiscent of lime peel wrapped in a bouquet of white flowers. We sipped it with a Crottin de Chavignol, against a backdrop of Robert Miles. We are going to harvest these Sauvignon Blanc grapes at Clos de Nonville, in Ile-de-France, not far from Fontainebleau. They courageously work their vines organically. We harvest the grapes by hand and then put the crates in refrigerated trucks. 1 hour 20 minutes drive then arriving in Courbevoie we continue with winemaking. The grapes arrive at 8°C in the cellar. They are immediately pressed and vinified in stainless steel vats to maintain the tension. We use 5% of the marc during fermentation to provide a more intense aroma and body. Although unusual, we decided to do malolactic fermentation to break the piercing acidity of the Sauvignon and bring roundness. We do not use any adjuvants or sulfur (not even when putting it in).
