Gamay des Collegues 2021 - Natural wine / Organic wine

This natural red wine is a special cuvée, entirely vinified in our cellar in Courbevoie, from Gamay grapes, from partner winegrowers south-east of Angers who work their vines biodynamically. It is a light and complex red, the aromas evoke a walnut and caramel muffin shared with colleagues, and accompanied by a forest fruit salad. We sipped it with a Saint-Nectaire, to Chicago Blues from the 1940s. We get these grapes from the brilliant winegrowers, Xavier and Géraldine Cailleau, who work their vines biodynamically. They come from plots around the château on a soil of sandstone with sponges on clay-limestone. We harvest the grapes by hand and then put the crates in the refrigerated trucks. 4 hours on the road then arrived in Courbevoie we continue with the vinification. The grapes arrive at 8°C in the cellar. 80% of the bunches are put directly into a vat which is saturated with carbon dioxide, this is called carbonic maceration, which extracts color and aromas of fresh fruit and spices. The rest is destemmed and crushed then macerated for 3 weeks. Everything is assembled for your greatest pleasure. We only use a very small dose of sulfur which remains within the levels of natural wines (15 mg/L in total SO2) Bottled in the cellar.
