Our yellow mustard seeds come from Jodhpur in the state of Rajasthan in India, a border state with Pakistan. This spice is used to make the famous condiment that we all know: mustard, the third most used condiment in the world, after salt and pepper. White (or yellow) mustard seeds are less pungent than black seeds, with a slightly woody vegetable flavor, and frankly reminiscent of the condiment in sauce.
