This spring tea is harvested in mid-April after the first leaf buds have opened. Only the most tender leaves are used. Diamond Leaf has a rich, unforgettable fruity aroma and a lovely floral fragrance that exudes anticipation when the can is opened. Kabusecha is green tea for the production of which the tea plants are shaded, which means that they develop a high content of chlorophyll and other active substances and at the same time few bitter substances. Their characteristic "shadow aroma" is called "ooika". Like many KEIKO teas, this tea is an intensely steamed tea (Fukamushi-cha, 100 - 120 seconds steaming time). Due to the gentle steaming, the leaf pores open and the extracts from the tea leaf get into the water more easily and quickly. This can be recognized by the deep green tea color in the cup and the yield of the tea - with top quality, up to 5 infusions are possible! In addition, intensely steamed early pickings are particularly suitable for cold infusions (mizudashi). Even with cold water, you can get an intense and refreshing tea after just a few minutes. Since the bitter substances do not dissolve so strongly in cold water, the sweet aromas of the Kabusecha come into their own. Incidentally, early pickings such as the Diamond Leaf also have a particularly high theanine content, which is noticeable by the sweet taste. In order to preserve the valuable aromas and ingredients of the tea as best as possible, we ask you to close the bag tightly and store it in the refrigerator or freezer in a cool and dark place. The early picking time of the Diamond Leaf in mid-April gives this noble Kabusecha a unique, almost fruity taste and a lovely, floral fragrance.
