Albacore Tuna in Olive Oil & Lemon

It is at the Ciboure auction that we find our “Albacore” white tuna, fished offshore by boats such as the “St Jean priez pour nous” or the “Sanaga” to name just two. Canned tuna is part of the traditions of many Basque families. We cook it in a flavored broth to keep all its aroma and tender flesh. Hand-jarred with organic olive oil, a thin slice of lemon and bay leaf, our trademark. In a ten kilo tuna there is the tuna belly which represents approximately 300 grams, which makes it a rare piece of remarkable finesse, it is the piece which represents the most omega 3. We put it in thin, tall jars to keep all its delicacy; it is the “Rolls” of tuna, the noblest part.
