Natural albacore tuna fillet flavored with bay leaf. Albacore tuna (or white tuna) is the finest tuna species, caught between June and October. Bay leaf: a typical French culinary herb, brings a sunny flavor by diffusing the essential oil contained in its leaves. These are also renowned for their medicinal properties. Our fillets are prepared and dressed by hand. Boneless, they are the leanest, most noble part of the tuna. Natural and flavored with just a little bay leaf, this recipe is lightly salted to preserve all the flavor of the wild fish and allow the freshness of the bay leaf to shine through. No additives, colorings, or other nonsense! The tuna comes mainly from the Saint Jean de Luz-Ciboure fish market in the Basque Country.  JEAN DE LUZ CANNERY IS: An organic, artisanal, and local cannery.
