IGP Côtes de Prouilhe white wine mustard is made with brassica juncea seeds grown in Aude. These seeds, crushed in a granite mill, develop a powerful mustard taste and a pleasant length in the mouth. The IGP Côtes de Prouilhe white wine is a Chardonnay grape variety that gives mustard its unique character. The power and dosage of white wine vinegar from Occitanie brings strength to the mustard. This recipe is completed with natural Gruissan salt, and at a content of only 2 g of salt per 100 g of mustard, half the amount of mustards on the market. The choice was made to leave the mustard seeds semi crushed, whole and ground in their entirety, which brings a crunchy, fiber to this very strong mustard recipe.
