IGP CATHARE

The Rustique artisanal mustard recipe is a clever mix of mustard seeds cultivated in Aude, red wine from Vendéole vineyards, old Occitan red wine vinegar, Gruissan salt, and water. Grinding in a granite mill reveals the flavors and taste of yesteryear, it allows the seeds to be sublimated by crushing them slowly. Rustic mustard is made with two varieties of mustard seeds that grow in Aude. I grind the seeds with patience, until I obtain a smooth mustard, while keeping a crunch in the mouth. A pleasant power on the palate and on the nose, which rounds off, thus expressing all its unique taste.
