The 'nduja is a spicy pork sausage made in Calabria. it is prepared from pork, Calabrian pepper (peperoncino piccante calabrese, in very large quantities) and other spices. Because of its consistency, it is often eaten spread on bread, raw or briefly baked, and can also be used in the composition of sauces accompanying pasta (pasta con la 'nduja).
