The apples are mixed, crushed and pressed.                                        The apple juice ferments completely to produce cider for distillation.                                        Double distillation takes place six months after the cider fermentation process.                                        The first distillation of the cider gives the small water at 30% vol.                                        and it is the second distillation, that of the small water, which gives Calvados. É aging for a minimum of twelve years in 400 liter toasted oak barrels, 25% of which are new barrels. Œit: Golden mahogany.                                        Clear, shiny appearance, shiny disc, beautiful legs.  Nose: Intense, complex, with notes of roasted coffee, candied apple, vanilla.                                        The apple aromas gradually develop to come to the fore.  Mouth: Sweet, slight bitterness, intense and round, robust, fruity.                                        Good concentration.  Enjoy the calvados plain and possibly on ice as an aperitif or digestive.
