A Double Distillation The cider used to make Calvados du Pays d’Auge has undergone a long and slow fermentation which lasts about a year. Large barrels can be used for the fermentation of this cider. Distilled in a pot still, it undergoes a double distillation which brings its alcohol content to an average of 70% vol.    Aging in oak barrels The Grandval Family eau-de-vie thus obtained must age for at least two years in oak barrels to qualify for the Calvados du Pays d’Auge appellation.  The “fine” or young Calvados is aged in oak barrels for three years. It is distinguished by intense aromas of fresh apples. Its color is light with pale yellow nuances.    Tasting advice It is ideal to accompany aperitifs (cocktails) and receptions.  Its strength in alcohol gives it a fresh and lively character.
