Normandy Pommeau - 70cl 17% - Christian Drouin

Pommeau de Normandie is a blend of Calvados and fresh apple juice in the proportions of ¼ calvados at 70% vol and 3/4 cider apple juice.    Pommeau de Normandie requires a minimum of 14 months of aging in oak barrels after maturation.   The Pommeau is made up of partly older pommels.   This additional aging allows for a better balance, without any apparent alcohol note.    Particular care is taken in the choice of apple varieties used in order to produce a Pommeau that is neither too sweet nor too heavy.    How to taste Pommeau de Normandie?    Pommeau de Normandie is drunk chilled (8 to 10°C) in a tulip glass.   Its apple aromas, the exuberance of its fruit and its moderate sweetness make it an aperitif appreciated by the greatest number of people.   Before a meal, it can be enjoyed plain but also in cocktails, topped with Champagne or mixed with many other spirits.    It is ideal with many desserts and is often used in cooking to flavor dishes with apple aromas.
