Lomo bellota is the noble part of the Iberian pig. These pigs are reared in the open, feed on acorns of "bellota" oak. Lomo is marinated in salt, pepper and spices, then dried for a minimum of 6 months. The artisanal production gives this intense flavor, a melting texture, a unique taste.
