Whenever I think of sun and tropics, the fruity taste of a ripe passion fruit comes to mind. These wonderfully versatile fruits are now also available in well-stocked greengrocers. The scent of a sliced passion fruit is incomparable! I use an exotic, mild fruit puree and fine vinegar with 5% acidity for my passion fruit pulp vinegar. This makes the consistency slightly creamy and not completely liquid. My passion fruit pulp vinegar goes particularly well with rocket and other slightly bitter leaf salads. The unique, fresh aroma also goes well with tuna salad. In combination with sesame oil you have created a wonderfully fruity dressing for leaf salads. To refine baked cheese or grilled fish and white meat, you should definitely try the passion fruit vinegar. As a successful topping for sweet creams, vanilla ice cream or fruit salad, this fruit pulp vinegar finds its way into every kitchen. A splash of passion fruit pulp vinegar with ice-cold mineral water is particularly refreshing and thirst-quenching.
