
Stracciatella is a traditional speciality of Puglia: it is nicknamed "heart of burrata" or "crushed burrata". Made by our caseificio Il Parco in San Giovani Rotondo, with buffalo milk from the Puglia region. Stracciatella is made from hand-pulled cheese strands and crème fraîche. Its taste is fine and elegant, with a creamy texture in the mouth. It is a pure delight eaten as is, on a slice of toasted bread with a drizzle of extra virgin olive oil.
